Grilled Vegetarian Carrot Dog Recipe

You might not fool people into thinking this grilled carrot is a hotdog, but you surely will leave them thinking it’s delicious. This healthy take on a classic is perfect for heart-healthy summer grilling. Try different variations using your favorite toppings and enjoy this unconventional treat.

Ingredients

  • 4 carrots
  • ½ cup vegetable broth
  • ¼ cup cider vinegar
  • 2 tbsp. soy sauce
  • ½ tbsp. Dijon mustard
  • 1 tsp. fresh garlic
  • 4 hot dog buns
  • Your favorite toppings

Instructions

  1. Steam carrots over the stove for 10-13 minutes or until just tender. Hint: be sure not to overcook them, as you will be marinating and grilling later!`
  2. Mix veggie broth, cider vinegar, soy sauce, mustard and garlic in a shallow pan. Add carrots, cover and marinate for 6-8 hours.
  3. Grill carrots on high heat until grill marks appear, about 5 minutes, rotating occasionally.
  4. Grill your buns, add carrots and go wild with your favorite toppings -- we used red onion, sliced jalapenos, romaine lettuce and sriracha sauce!
