Filet mignon is known for its tenderness but must be prepared and grilled properly to maintain it’s perfect, melt-in-your-mouth texture and not get tough during the process. Start with good quality cuts of meat and follow these few simple steps to make the perfect grilled filet mignon.

Ingredients
- 2 filets, about 1 ½ - 2 inches thick
- Salt & pepper, to taste
- Olive oil, for oiling the grate
Instructions
- Rest filets at room temperature for 30-45 minutes. This will allow a more even, thorough cooking on this thick cut of beef.
- Preheat your grill to 450 while the filets are resting, about 15-20 minutes. Searing the meat before cooking internally will prevent overcooking.
- Carefully add olive oil to your grill rack as it comes up to temperature, which will keep the filets from sticking.
- Season your steaks with salt and pepper. Keeping it simple with the seasoning lets the flavor of this great cut of meat shine through.
- Place filets on the grill and close the lid. For medium-rare, grill 5 minutes on the first side, then flip and rotate, grilling 5 more minutes on the other side. Do not puncture the meat while grilling, use a grill-safe spatula.
- Remove and let rest 5 minutes, with a lightly placed foil tent. The meat will rise a few more degrees while it continues to cook internally. The final temperature for medium-rare steak should be 130-135. Serve plain or with sauce of your choice.
