Nothing beats a soft, scrumptious muffin filled with fresh blueberries. This recipe is simple to whip up and perfect for a breakfast, snack, or easy summer dessert. Want to make it a little extra delicious? After the muffins are baked and cooled, cut in half and grill cut side down on the grate for a toasted muffin, then slather in fresh butter before serving.

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup butter, softened
  • 2 eggs
  • ½ cup milk
  • 1 tsp. vanilla
  • 1-2 cups fresh blueberries

Instructions

  1. Prepare your grill for indirect grilling at 425 degrees with the lid closed.
  2. Line a 1- cup grill-safe muffin tin with liners or grease well.
  3. In a large bowl, whisk together flour, baking soda, baking powder and salt. `
  4. In a mixer on high speed, cream together butter, granulated sugar, and brown sugar. On medium speed, mix in eggs and vanilla. On low speed, mix in milk and dry ingredients, beating until well combined. Gently fold in the blueberries.
  5. Evenly distribute the batter into the muffin tin cups. Optionally, sprinkle a little brown sugar on each muffin before baking.
  6. Place muffin tin over unlit burner. Grill 5 minutes; reduce heat to 375 and grill 20-25 more minutes, or until a toothpick comes out clean.
  7. Remove from grill, cool and enjoy.
