Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp. olive oil
- 1 tsp. Italian seasoning
- 1 tsp. garlic powder
- 1 tsp. crushed red pepper flakes, optional
- Salt & pepper, to taste
- 3 plum tomatoes, chopped
- 2 tbsp. fresh basil, chopped finely
- 2 tsp. fresh lemon juice
Instructions
- Pound chicken breasts to an even thickness, about 1" thick. In a bowl, combine olive oil, Italian seasoning, garlic powder, salt and pepper. If you prefer a little added spice, stir in the crushed red pepper flakes. Coat chicken in the mixture evenly, allowing to marinate in the refrigerator 30 minutes.
- Meanwhile combine chopped tomatoes, fresh basil and lemon juice in a bowl; set aside.
- Grill chicken 5-7 minutes each side, or until completely cooked. Top chicken with tomato mixture and serve!
