Ingredients
- 6 boneless, skinless chicken breasts
- ¼ cup olive oil
- 2-3 chipotle peppers + 3 tbsp. adobo sauce (canned)
- 5 garlic cloves
- 1 shallot, peeled and cut into chunks
- 2 tbsp. cumin
- 1 tbsp. coriander
- 2 tsp. chili powder
- 1 tsp. dried oregano
- 2 tsp. salt
- 2-3 tbsp. fresh cilantro, chopped for garnish
Instructions
- Preheat grill to medium heat.
- Place all ingredients in a blender or food processor, blending into a thick paste.
- Place chicken and marinade in a container; allow to marinate at least 30 minutes to overnight.
- Grill chicken breasts 5-7 minutes per side, or until chicken is cooked to temperature and grill marks have formed.
- Let rest 5 minutes before slicing and serving with a sprinkle of fresh cilantro.
