Fennel might not be the first food you think of when you hear ‘grilled side dish’ but this simply seasoned vegetable is a perfect accompaniment to grilled steak, pork chops, sausage and more. Fennel is in the carrot family, and is similarly crunchy, often shaved thin for raw salads. We love it cooked though, allowing the bulb to soften over the heat, but still retain its aromatic anise flavor that’s just so unique. For this recipe, you’ll only use the fennel bulb, but the fronds can be saved to use in stocks, dressings, etc. Or chop some and sprinkle over the grilled fennel as a pretty garnish for serving!

Ingredients
- 2 bulbs fennel, slices
- 2-3 tbsp. olive juice
- 2-3 tbsp. lemon juice
- Salt & pepper, to taste
Instructions
- Preheat grill to medium-high heat.
- Trim off the fennel fronds and thick stocks from the top of the bulb, then trim a slice off the very bottom of the bulb, taking care to leave the core intact. Turn the bulb upright again and cut into ½” slices.
- Brush the slices with olive oil and season with salt and pepper.
- Grill 3-5 minutes per side, or until lightly charred.
- Remove from grill to a serving plate, drizzle with fresh lemon juice and enjoy!
