- 8 oz. block of feta cheese, sliced in four
- 12 oz. cherry tomatoes
- 3 tbsp. olive oil
- 2 tbsp. fresh lemon juice
- 1 tbsp. honey
- 1 tbsp fresh thyme, chopped
- Black pepper
Instructions
- Heat grill to medium-high.
- Lightly oil the bottom of a cast iron skillet and place the feta pieces and cherry tomatoes in the center.
- In a bowl whisk together olive oil, lemon juice, honey, and thyme; drizzle over feta and tomatoes.
- Season lightly with fresh black pepper.
- Place skillet on the grate and cover, grilling 10 minutes or until feta is soft.
- Remove and serve immediately while warm.
