Salty, savory feta cheese combines perfectly with acidic tomatoes and fresh lemon, earthy thyme, and sweet honey for such a satisfying taste in every bite. It’s a wonderful appetizer served with warm pita and accompaniments like olives, dates, apricots, and toasted almonds. It’s also a great side dish served with grilled kebabs, vegetables, chicken and more.

Ingredients

  • 8 oz. block of feta cheese, sliced in four
  • 12 oz. cherry tomatoes
  • 3 tbsp. olive oil
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. honey
  • 1 tbsp fresh thyme, chopped
  • Black pepper

Instructions

  1. Heat grill to medium-high.
  2. Lightly oil the bottom of a cast iron skillet and place the feta pieces and cherry tomatoes in the center.
  3. In a bowl whisk together olive oil, lemon juice, honey, and thyme; drizzle over feta and tomatoes.
  4. Season lightly with fresh black pepper.
  5. Place skillet on the grate and cover, grilling 10 minutes or until feta is soft.
  6. Remove and serve immediately while warm.
