This marinade version of the traditional jerk seasoning is made with a variety of ingredients, to create a complex, slightly spicy, completely cravable flavor. You’ll find yourself reaching for this mixture to use on chicken, fish, pork and veggies - you name it, it will be delicious. Blend your batch, then use immediately or up to seven days later, just remember to keep it in the fridge.
Ingredients
- ½ onion
- 3 scallions
- 1 spicy pepper
- 4 cloves garlic
- 1 tsp. brown sugar
- 2 tsp. allspice
- 1 tsp. salt
- 1 tsp. pepper
- ½ tsp. nutmeg
- 2 tsp. fresh thyme
- 1 tsp. fresh ginger
- ½ tsp. cinnamon
- 2 tbsp. white vinegar
- 2 tbsp. oil
- 2 tbsp. soy sauce
Instructions
- Roughly chop solid ingredients, then combine all ingredients in a blender or food processor; blend until smooth.
- Add preferred meat or veggies to the mixture, and then marinate the desired length of time. Hint: marinate the longest for pork, the least for delicate fish and seafood.
- Grill marinated food at appropriate temperature until desired level of doneness and enjoy!
