Jamaican Jerk Marinade

This marinade version of the traditional jerk seasoning is made with a variety of ingredients, to create a complex, slightly spicy, completely cravable flavor. You’ll find yourself reaching for this mixture to use on chicken, fish, pork and veggies - you name it, it will be delicious. Blend your batch, then use immediately or up to seven days later, just remember to keep it in the fridge.

Ingredients

  • ½ onion
  • 3 scallions
  • 1 spicy pepper
  • 4 cloves garlic
  • 1 tsp. brown sugar
  • 2 tsp. allspice
  • 1 tsp. salt
  • 1 tsp. pepper
  • ½ tsp. nutmeg
  • 2 tsp. fresh thyme
  • 1 tsp. fresh ginger
  • ½ tsp. cinnamon
  • 2 tbsp. white vinegar
  • 2 tbsp. oil
  • 2 tbsp. soy sauce

Instructions

  1. Roughly chop solid ingredients, then combine all ingredients in a blender or food processor; blend until smooth.
  2. Add preferred meat or veggies to the mixture, and then marinate the desired length of time. Hint: marinate the longest for pork, the least for delicate fish and seafood.
  3. Grill marinated food at appropriate temperature until desired level of doneness and enjoy!
