- 6 oz. sweet vermouth
- 1 cup gin
- 2 oranges
- 3 tbsp. caster sugar
- 2 cloves

Instructions
- Begin by infusing gin for cocktails. In a pot, add zest of 1 orange, caster sugar, cloves, star anise and cinnamon stick. Bring to a boil, then let simmer for 10 minutes or until liquid becomes syrupy. Once syrup is cool, place in a bottle and mix in gin. Shake well and store away for about a week to infuse. Strain liquid before using.

- Peel 1 orange into long strips, then place on grill to smoke for about 10 minutes or until ends are charred.
- To serve, fill rocks glass with ice, and add in 1 ½ oz. bitter liqueur, sweet vermouth and infused gin to a shaker. Shake to mix well and pour into glass. Garnish with smoked orange peel and enjoy!
